Vinification: This rosé was racked by bleeding by opening the base of the vat while the wine is still light in color. Traditional vinification without clusters, aged in concrete vat with minimum sulfur.
Winemaker Notes: : Le Salse wines are produced by Cantine Belisario, a top-quality co-op located in the village of Matelica. All fruit that goes into these delicious table wines is grown organically and sustainably, with utmost respect for the environment put first. ‘It’s our response to the ocean of Pinot Grigio that has washed up on US shores,’ says the winery. Fruit for their Verdicchio comes from Jurassic-period vineyards located near saltwater springs (hence the name salse, which comes from ‘sale’ [salt]). Juice is vinified in cement and/or steel and lightly filtered upon bottling, leading to a fresh, acid-driven cuvée marked by flavors of pear, peach, and bitter almond.\\n

The winery’s flagship wine, Papà Celso is dedicated to the memory of Celso Abbona, father of Marziano, who planted every vine in the Doriolo vineyard. Made from grapes grown on vines over 60 years old that give the wine a pleasant balance between elegance, power, and harmony. Rich and well-structured with aromas of red and black fruits, this is a balanced and harmonious wine on the palate. The light acidity and subtle tannins have hints of pulpy fruit. Can develop in the bottle for many years. Pairs well with first pasta dishes with ragù sauce, white meat, and medium-aged cheeses.
This blend of 60% Montepulciano, 20% Primitivo and 20% Nerello Mascalese offers intense aromas of blackberry, blood orange and menthol on the nose. It's full and rich in feel, with jammy dark-fruit flavors bolstered by a heady dose of warm spice. Bright acidity shines throughout, with polished tannins lending support.
